Cookies are laden with butter, shortenings and sugar. The first thing to do is to look at the recipe and see the measurements of the sugar and then note what kind of sugar is used. There should be two kinds: brown sugar and white sugar. It is in the type of sugar used that will totally transform the texture of the cookies.

Crunchy cookies will need white sugar and hardly any brown sugar. Semi crunchy cookies or semi-chewy cookies will again need a variation of the two sugar measurements. Again, if the original recipe calls for 2 cups white sugar and 1 cup brown sugar make it 1 1/2 cups white sugar and 2 cups brown sugar. This will make the cookies not too crunchy and not too chewy - it will be just right!

For chewy cookies, another variation of the measurements between the two sugars will have to be done. If the original is again 2 cups white sugar and 1 cup brown sugar make it 4 1/2 cups brown sugar. This will give the cookies the chewy effect that is so great with chocolate chip cookies.

Now, for a bonus: there are people who like their cookies gooey chewy. This is not impossible to achieve. Again for the 2 cups white sugar and 1 cup brown sugar original recipe, convert the measurements to 4 cups brown sugar and 1/2 molasses or honey. This will give the cookies a super gooey chewy effect.

Now for those who are curious why the sugars are considered the key, well it may take a lot of explanations but to simplify the process, it is the brown sugar that makes the cookies chewy. Also, the same thing can be done with cakes. More brown sugar will make the cake moister.

Cooking: Baking Tilapia

Although baking is the most popular cooking way for tilapia, many do not know the proper procedure on how to bake tilapia.
There are three main types of baking method to bake tilapia. The first is baking tilapia in garlic and olive oil. The listed ingredients are four tilapia fillets, four cloves of crushed garlic, three tablespoons of olive oil, a chopped onion, and a quarter teaspoon of cayenne pepper. The fillets should be washed and pat dry before cooking. Then rub the fish with garlic and arrange them in a bowl. Next add the olive oil into the fish and top it with onion. Place it inside the refrigerator for six to eight hours.
After that, preheat the oven to 175 degrees Celsius or 350 degrees Fahrenheit. Then remove the fish from the refrigerator and place them onto a baking dish. Pour the remaining marinade onto the fish and season it with a quarter teaspoon of white pepper and a quarter teaspoon of cayenne black pepper. Next place the baking dish into the oven and cook for 30 minutes. Serving can be done immediately after cooking.
The other baking method is the easy baked tilapia. On how to bake tilapia using this method, you should prepare the ingredients which include four tilapia fillets, three tablespoons of melted butter, three tablespoons of lemon juice, one and a half teaspoons of garlic powder and a pinch of salt. Besides, you also need two tablespoons of drained capers, half teaspoon of dried oregano and a pinch of paprika. Firstly place the fish on a baking dish. Then mix the lemon juice, salt, butter and garlic powder in a container. Pour the mixture over the fish and add paprika, oregano and capers. Preheat the oven to 400 degrees Fahrenheit and bake the fish for 20 to 30 minutes before serving it with rice.
Another way of baking tilapia is the Hudson's baked tilapia with dill sauce. To perform this baking method, you need four ounces of tilapia fillets, salt, pepper, one tablespoon of any seasoning powder, one lemon sliced thinly, a quarter cup of mayonnaise, half cup of sour cream, half a quarter teaspoon on garlic powder, one teaspoon of fresh lemon juice and two tablespoons of chopped fresh dill.
First of all, you need to preheat the oven to 350 degrees Fahrenheit or 175 degrees Celsius. Then grease the baking dish light. Next season the tilapia fillets with salt, pepper and seasoning powder in a considerable amount according to personal taste and preferences. Arrange the seasoned fish in a single layer on the baking dish. Place the sliced lemon over the fillets and it is recommended to use only two slices for a piece of fillet to ensure it covers most of the surface. Bake the fillet uncovered for 15 to 20 minutes in the oven or until fish can be easily flaked with a fork. While the fish is being baked, you can prepare the mixture of sour cream, mayonnaise, lemon juice, garlic powder, and dill in a bowl. When the fish is done, you can serve the mixture with the fish.

Ingrediants:

Chicken meat (thigh works best but breast is just as nice)

Spaghetti

Cream

Mushies

Parmegario

Coat your chick meat with black pepper and olive oil and leave to one side to marinade, about an hour usually works best but the longer you leave it the more the meat will soak up all the flavours so its really up to you. Prepare your mushies and begin to fry in a suitable pan, I find a bit of water helps to really bring out the flavours and juices. Prepare a large pan of water and bring to the boil. Once the water is boiling its time to add the pasta. When the pasta is ready add the cream, cheese and oregano, give everything a good mix and bake in the oven until the top layer of pasta goes a bit crispy and all of the cheese has melted. Serve with a simply dressed salad on warm plates. A good house wine is never not a good idea either! Just make sure to leave room for your sweet!

Cooking with yeast can be an exasperating experience. However, the flip side is it can also help you to create delightfully, warm, soft and delicious dinner rolls that are literally straight out of the oven to the dinner table. With a little patience you can make rolls that look, smell and taste like they came from the finest bakery.

There are a few main tips that need to keep in mind to create wonderful rolls. First, you need to have yeast that is fresh. Old yeast tends to act weakly or not act at all, which won't give you any rising action in your rolls and will leave you with flat, dense rolls that are hard and tasteless. Next, you need to have a draft free, warm place to allow your dough to rise. Without the rising period the rolls remain small and hard. It is essential to have this warm place to let the rolls rise to perfection.

Some smaller tips to help your rolls turn out perfectly will help to set your baking apart. Warm your liquid before adding to the yeast. Make sure it is not hot or it will kill the yeast, too cold and it won't work have a reaction with the yeast.

Don't dump all your flour in at the same time. Add it a little at a time and knead it in thoroughly. A common beginner mistake is overloading the dough with flour. Excess flour will make it harder for the dough to rise and the resulting rolls will be dense and lack flavor. Keep adding flour until the dough stops sticking to the sides of the bowl. Knead this mass for five minutes. If it sticks in your hand, add more flour until it is easily workable. Add enough so that the dough becomes supple and all the lumps disappear.

You may choose between doing a double rise or settle for a single rise depending on how much time you have. To do a double rise, place the dough in a greased bowl, cover it, and put it on a warm place until it doubles in size. Don't rush things by thinking an oven with the lowest setting qualifies for a "warm place" - doing this will bake your dough.

Once it's doubled, punch down the dough. If going for a double rise, repeat the previous process. If you're pressed for time, roll the dough and place it on a surface dusted with flour. You can now cut it into portions and place it on baking pans. Let it rise again for a bit and while preheating the oven. Place them in and bake according to instructions. When done, brush a little butter on top and serve hot. Take pride as you watch guests stuff these delectable treats in their eager mouths.
